Ingredients
  

  • 4 vegan chicken fillets about 6 oz each
  • 1 cup fresh spinach chopped
  • ½ cup vegan cream cheese
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté spinach and garlic in olive oil until wilted, about 3 minutes.
  • Mix sautéed spinach with vegan cream cheese, salt, and pepper.
  • Cut a pocket into each fillet and stuff with the creamy mixture.
  • Place fillets in a baking dish and bake for 20-25 minutes until golden.
  • Serve hot with your favorite side dish.
