Ingredients
  

  • Fresh spinach chopped: 2 cups
  • Mushrooms sliced: 1 cup
  • Olive oil: 1 tbsp
  • Garlic minced: 2 cloves
  • Large tortillas: 4
  • Nutritional yeast: 2 tbsp optional for cheesy flavor
  • Salt and pepper: to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté 1 minute until fragrant.
  3. Toss in mushrooms, cook 5 minutes until soft.
  4. Stir in spinach, cook 2 minutes until wilted.
  5. Season with salt, pepper, and nutritional yeast if using.
  6. Warm tortillas in a pan or microwave.
  7. Fill each tortilla with spinach-mushroom mix and wrap tightly.
