Ingredients
  

  • 2 cups dried split peas rinsed
  • 1 ½ cups vegan ham diced
  • 2 medium carrots chopped
  • 2 celery stalks chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste
  • Optional: parsley for garnish

Method
 

  1. Rinse split peas under cold water; set aside.
  2. Heat 1 tbsp oil in large pot; sauté onion, garlic, carrot, and celery for 5–6 minutes.
  3. Add diced vegan ham; cook 3 minutes to release smoky flavor.
  4. Stir in split peas, vegetable broth, bay leaf, and thyme; bring to boil.
  5. Reduce heat; simmer 40–45 minutes, stirring occasionally until peas soften and soup thickens.
  6. Remove bay leaf; season with salt and pepper.
  7. Serve hot with parsley garnish and a side of crusty bread.
