Ingredients

For the Bread:

  • 3 ripe bananas mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup organic cane sugar
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped fresh strawberries

For the Vanilla Drizzle:

  • 1/2 cup powdered sugar
  • 1 –2 tbsp almond milk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease or line your loaf pan with parchment.
  • In a large bowl, mash bananas until they resemble your willpower near sugar.
  • Add melted coconut oil, sugar, almond milk, and vanilla. Mix until smooth and emotionally balanced.
  • In another bowl, whisk together flour, baking soda, and salt like you mean it.
  • Combine wet and dry ingredients. Stir gently—this is banana bread, not a gym workout.
  • Fold in chopped strawberries like you're hiding secrets in the batter.
  • Pour batter into the pan. Level the top because we’re not animals.
  • Bake for 50–55 minutes or until a toothpick exits clean. Like your ex should’ve.
  • Let cool for 10 minutes in the pan, then transfer to a rack.
  • Mix drizzle ingredients in a small bowl until smooth and glossy.
  • Drizzle generously over the cooled loaf. Channel your inner Instagram food stylist.

Flavor-Boosting Tips & Notes

  • Use super ripe bananas—like “should’ve been thrown out last week” ripe.
  • Swap half the flour with almond flour for a nutty twist.
  • Chill the drizzle for five minutes before topping for that perfect drip.
  • Add a handful of chopped pecans if you’re feeling chaotic and crunchy.
  • This loaf freezes beautifully, but let’s be honest—you won’t need to.
