Stuffed Chicken Breast with Spinach and Cheese Recipe

Ingredients
  

For the stuffed “chicken”:
  • 4 vegan chicken breasts
  • 2 cups fresh spinach chopped
  • 1 cup vegan cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme
Optional sides:
  • Roasted vegetables
  • Mixed green salad

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat; sauté garlic and spinach until wilted, about 3–4 minutes.
  3. Season vegan chicken breasts with salt, pepper, paprika, and thyme.
  4. Carefully slice a pocket into each breast, avoiding cutting through the other side.
  5. Stuff each pocket with sautéed spinach and vegan cheese mixture.
  6. Secure openings with toothpicks if needed.
  7. Place stuffed breasts in a baking dish and bake for 20–25 minutes until golden and cooked through.
  8. Remove from oven, let rest 5 minutes, then serve hot.
