Ingredients
  

Main Skillet
  • Vegan chicken chunks – 250 g
  • Sweet potato – 1 cup diced
  • Onion – ½ cup chopped
  • Bell peppers – ½ cup sliced
  • Garlic – 1 tsp minced
  • Olive oil – 1.5 tbsp
  • Paprika – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
  • Thyme – ½ tsp
  • Lemon juice – 1 tbsp
For Serving
  • Fresh parsley – 1 tbsp chopped
  • Rice or quinoa – 1 cup optional

Method
 

  1. Heat olive oil in a skillet.
  2. Add sweet potatoes and cook for 8 minutes, stirring often.
  3. Add onions and bell peppers; sauté for 2 minutes.
  4. Add vegan chicken, garlic, paprika, salt, pepper, and thyme.
  5. Cook for 6–7 minutes until golden.
  6. Drizzle lemon juice.
  7. Garnish with parsley and serve with rice or quinoa.
