Ingredients
  

  • Plant-based chicken chunks: 350 g
  • Sweet potatoes peeled and cubed: 2 medium (450 g)
  • Onion chopped: 1 medium
  • Garlic minced: 3 cloves
  • Carrot sliced: 1 medium
  • Celery chopped: 1 stalk
  • Vegetable broth: 2½ cups 600 ml
  • Olive oil: 1 tablespoon
  • Smoked paprika: 1 teaspoon
  • Dried thyme: 1 teaspoon
  • Black pepper: ½ teaspoon
  • Salt: 1 teaspoon
  • Bay leaf: 1
  • Fresh parsley chopped: 2 tablespoons

Method
 

  1. Add sweet potatoes, carrot, celery, and onion into the crockpot.
  2. Place plant-based chicken evenly over vegetables.
  3. Pour vegetable broth and olive oil.
  4. Add garlic, paprika, thyme, salt, pepper, and bay leaf.
  5. Stir gently to combine.
  6. Cover and cook on low for 3 hours until tender.
  7. Remove bay leaf and adjust seasoning.
  8. Garnish with parsley and serve warm.
