Sweet Potato Egg Hash Quick Dinner Recipe

A quick, hearty hash with sweet potatoes and eggs for a balanced meal.

Ingredients
  

  • 2 cups sweet potatoes diced
  • 2 eggs
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp parsley chopped

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced sweet potatoes (2 cups).
  3. Cook for 8–10 minutes until tender and slightly crispy.
  4. Add chopped onion and cook for 3 minutes.
  5. Add minced garlic and stir for 1 minute.
  6. Sprinkle paprika, salt, and pepper.
  7. Make two spaces in the pan.
  8. Crack eggs into the spaces.
  9. Cook until eggs reach desired doneness.
  10. Garnish with parsley and serve warm.
