Ingredients
  

  • Sweet potatoes peeled and diced: 3 cups
  • Vegan sausage sliced: 1 cup
  • Bell peppers red, yellow, or orange, diced: 1 cup
  • Olive oil: 2 tbsp
  • Onion chopped: 1 small
  • Garlic minced: 2 cloves
  • Smoked paprika: 1 tsp
  • Salt and pepper: to taste
  • Fresh parsley chopped (optional): 2 tbsp

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced sweet potatoes; cook 10 minutes, stirring occasionally.
  • Toss in onion and garlic, cook 3 minutes until softened.
  • Add bell peppers and vegan sausage, sauté another 5 minutes.
  • Sprinkle smoked paprika, salt, and pepper; stir well.
  • Cook until potatoes are tender and edges crisp.
  • Garnish with parsley before serving.
