Ingredients
  

  • Cooked sweet potato mashed: 1 cup (220 g)
  • Oat flour: ¾ cup 75 g
  • Plant-based protein powder unflavored: 2 tablespoons
  • Plant-based milk: ¾ cup 180 ml
  • Baking powder: 1 teaspoon
  • Cinnamon powder: ½ teaspoon
  • Vanilla extract: ½ teaspoon
  • Maple syrup: 1 tablespoon
  • Salt: ¼ teaspoon
  • Coconut oil for cooking: 1 teaspoon

Method
 

  1. Add mashed sweet potato to a mixing bowl and mash until smooth.
  2. Add oat flour, protein powder, baking powder, cinnamon, and salt.
  3. Pour plant-based milk, vanilla extract, and maple syrup.
  4. Mix gently until a thick, pourable batter forms.
  5. Heat a non-stick pan and lightly grease with coconut oil.
  6. Pour batter to form small pancakes.
  7. Cook two minutes per side until golden and set.
  8. Serve warm.
