Ingredients
  

  • 4 plant-based chicken thighs
  • ½ cup vegan yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger grated
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon chopped coriander

Method
 

  1. Mix vegan yogurt, lemon juice, garlic, ginger, turmeric, chili powder, cumin, pepper, and salt in a bowl.
  2. Coat plant-based chicken thighs in the marinade.
  3. Rest for at least 10 minutes for deeper flavor.
  4. Heat grill pan with olive oil on medium heat.
  5. Place the thighs on the grill and cook 4 minutes each side.
  6. Brush leftover marinade while grilling.
  7. Garnish with coriander before serving.
