Method
- Coat tofu cubes with cornstarch.

- Mix soy sauce, maple syrup, rice vinegar, garlic, ginger, and water.
- Pour the sauce into the pan.
- Add the cornstarch slurry to thicken.
- Toss tofu until glossy.
- Add rice to bowls.
- Top with tofu, broccoli, and carrots.
- Sprinkle sesame seeds and spring onions.
