  • 1 ripe avocado
  • ½ cup cucumber chopped
  • ¼ cup red onion chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste
