- 12 oz vegan ground “turkey” soy or pea protein
- 1 small onion finely chopped
- 1 red bell pepper diced
- 1 cup shredded carrots
- 2 cloves garlic minced
- 1 tbsp olive oil
- 2 tbsp soy sauce or tamari
- 1 tsp smoked paprika
- 1 head butter lettuce or iceberg leaves separated
- Salt and pepper to taste
Heat olive oil in skillet over medium heat.
Sauté onion and garlic until fragrant and translucent, about 3 minutes.
Add vegan ground “turkey,” breaking up chunks, cook 5 minutes until browned.
Stir in bell pepper, carrots, soy sauce, smoked paprika, salt, and pepper. Cook 2 minutes.
Remove from heat; spoon mixture into lettuce leaves.
Serve immediately with extra soy sauce if desired.
