Ingredients
  

  • 12 oz vegan ground “turkey” soy or pea protein
  • 1 small onion finely chopped
  • 1 red bell pepper diced
  • 1 cup shredded carrots
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 tbsp soy sauce or tamari
  • 1 tsp smoked paprika
  • 1 head butter lettuce or iceberg leaves separated
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in skillet over medium heat.
  • Sauté onion and garlic until fragrant and translucent, about 3 minutes.
  • Add vegan ground “turkey,” breaking up chunks, cook 5 minutes until browned.
  • Stir in bell pepper, carrots, soy sauce, smoked paprika, salt, and pepper. Cook 2 minutes.
  • Remove from heat; spoon mixture into lettuce leaves.
  • Serve immediately with extra soy sauce if desired.
