Turkey Meatball Protein Bowl Recipe

Ingredients
  

Meatballs
  • Plant-based ground turkey — 14 oz
  • Breadcrumbs — ½ cup
  • Flax egg 1 tbsp flaxseed + 2.5 tbsp water — 1
  • Garlic powder — 1 tsp
  • Onion powder — 1 tsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp
Bowls
  • Cooked brown rice — 2 cups
  • Roasted chickpeas — 1 cup
  • Cucumber sliced — 1 cup
  • Cherry tomatoes — 1 cup
  • Baby spinach — 2 cups
Sauce
  • Tahini — 3 tbsp
  • Lemon juice — 2 tbsp
  • Water — 2 tbsp

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix plant-based ground turkey, breadcrumbs, flax egg, garlic powder, onion powder, salt, and pepper.
  3. Form mixture into 16 small meatballs.
  4. Place meatballs on lined baking sheet.
  5. Bake 18 minutes until lightly golden.
  6. Whisk tahini, lemon juice, and water in bowl.
  7. Divide brown rice into four serving bowls.
  8. Add spinach, chickpeas, cucumber, and tomatoes.
  9. Place baked meatballs on top.
  10. Drizzle tahini sauce before serving.
