Vegan Almond Protein Banana Bread Recipe

Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup almond flour
  • ½ cup oat flour or all-purpose flour
  • 1 scoop 25g vegan vanilla protein powder
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil
  • ½ cup plant milk
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Optional: 2 tbsp chopped almonds or vegan chocolate chips

Method
 

  1. Mash bananas.
  2. Mash 2 ripe bananas until smooth.
  3. Add wet ingredients.
  4. Stir in maple syrup, melted coconut oil, and plant milk.
  5. Mix in protein.
  6. Add the vegan protein powder and combine.
  7. Add dry ingredients.
  8. Stir in almond flour, oat or AP flour, baking powder, cinnamon, and salt.
  9. Combine batter.
  10. Mix until thick and smooth; add almonds if desired.
  11. Fill pan.
  12. Pour into a lined loaf pan.
  13. Bake.
  14. Bake at 175°C for 40 minutes or until golden and firm.
  15. Cool and slice.
  16. Rest before cutting for perfect slices.
