Vegan Chocolate Chip Almond Cookies Recipe

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup vegan butter softened
  • ½ cup almond butter
  • ¾ cup brown sugar
  • ¼ cup cane sugar
  • ¼ cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup vegan chocolate chips
  • ¾ cup chopped almonds

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix flour, oats, baking soda, and salt in one bowl.
  3. In another, beat vegan butter, almond butter, brown sugar, and cane sugar until fluffy.
  4. Add applesauce and vanilla, stirring until smooth.
  5. Slowly fold dry mixture into wet to form dough.
  6. Stir in chocolate chips and almonds evenly.
  7. Scoop dough balls onto baking sheet, spacing two inches apart.
  8. Bake 10–12 minutes until edges turn golden.
  9. Cool on a rack, then devour shamelessly.
