  • Spinach – 2 cups fresh
Seasoning & Flavor
  • Olive oil – 1 tbsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp
  • Paprika – ½ tsp
  • Thyme – ½ tsp
  • Lemon juice – 1 tbsp

Method
 

  1. Add white beans, onion, carrot, celery, and tomato into the crockpot.
  2. Pour in the vegetable broth.
  3. Add garlic, paprika, thyme, salt, and pepper.
  4. Drizzle olive oil for richness.
  5. Stir ingredients gently.
  6. Cook on LOW for 6 hours.
  7. Add spinach in the final 10 minutes.
  8. Stir until wilted.
  9. Add lemon juice before serving.
  10. Dish it up with bread or rice.
