Instructions
Heat olive oil in a large pot over medium heat.
Sauté onion, garlic, carrots, and celery until soft.
Add wild rice, vegan chicken, vegetable broth, thyme, salt, and pepper.
Bring to a boil, then simmer covered for 35 minutes or until rice is tender.
Stir in fresh parsley before serving.
