Ingredients
  

  • 1 cup wild rice rinsed
  • 1 ½ cups shredded vegan chicken substitute
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 carrots diced
  • 2 celery stalks diced
  • 6 cups vegetable broth
  • 2 tbsp olive oil
  • ½ cup fresh parsley chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, garlic, carrots, and celery until soft.
  • Add wild rice, vegan chicken, vegetable broth, thyme, salt, and pepper.
  • Bring to a boil, then simmer covered for 35 minutes or until rice is tender.
  • Stir in fresh parsley before serving.
