Bright, citrusy cauliflower “shrimp” tacos tossed with garlic, lemon, and spices, tucked in tortillas, and topped with fresh crunchy garnishes.

Ingredients
  

  • 1 medium cauliflower head cut into florets
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 garlic cloves minced
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp cumin
  • ¼ tsp black pepper
  • ½ tsp sea salt
  • 8 small corn tortillas
  • 1 cup shredded purple cabbage
  • ½ cup diced tomatoes
  • ½ avocado sliced
  • Fresh cilantro for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk olive oil, lemon juice, zest, garlic, paprika, chili, cumin, salt, and pepper.
  3. Toss cauliflower florets in marinade until fully coated.
  4. Spread cauliflower evenly on baking sheet and roast 20 minutes, flipping halfway.
  5. Warm tortillas in a skillet until soft.
  6. Assemble tacos with cauliflower, cabbage, tomatoes, avocado, and cilantro.
  7. Squeeze extra lemon juice before serving.
