Ingredients
  

  • 3 medium sweet potatoes peeled and cubed
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Prep all veggies and beans.
  • Add sweet potatoes, onion, garlic, bell pepper, beans, and tomatoes to slow cooker.
  • Pour in vegetable broth, sprinkle chili powder, cumin, paprika, salt, and pepper.
  • Stir to combine everything.
  • Cook on low for 6 hours or high for 3 hours.
