  • Onion – 1 medium finely chopped

  • Red curry paste – 1 tablespoon
  • Soy sauce – 1 tablespoon
  • Lime juice – 1 tablespoon
  • Olive oil – 1 tablespoon
  • Bell pepper – 1 cup sliced
  • Spinach – 1½ cups
  • Chili flakes – ¼ teaspoon
  • Salt – to taste
  • Fresh cilantro – 2 tablespoons chopped

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and sauté until soft and translucent.
  3. Stir in garlic and ginger, cooking briefly until fragrant.
  4. Add red curry paste and mix well.
  5. Add plant-based shrimp and cook for 3–4 minutes.
  6. Whisk peanut butter with coconut milk, soy sauce, and lime juice.
  7. Pour sauce into the skillet and stir gently.
  8. Add bell pepper and simmer for 8 minutes.
  9. Fold in spinach and cook until wilted.
  10. Season with salt and chili flakes.
  11. Garnish with cilantro and serve warm.
