Ingredients
  

  • Sweet potato cubed: 2 medium (400 g)
  • Quinoa uncooked: ¾ cup (135 g)
  • Water: 1½ cups 360 ml
  • Olive oil: 2 tablespoons
  • Lemon juice: 1½ tablespoons
  • Garlic powder: ½ teaspoon
  • Smoked paprika: ½ teaspoon
  • Salt: ¾ teaspoon
  • Black pepper: ¼ teaspoon
  • Red onion finely chopped: 2 tablespoons
  • Fresh parsley chopped: 2 tablespoons

Method
 

  1. Preheat oven to 200°C and line a baking tray with parchment paper.
  2. Toss sweet potato cubes with one tablespoon olive oil, paprika, salt, and pepper.
  3. Bake for 25 minutes, flipping halfway until tender and caramelized.
  4. Rinse quinoa and cook with water for 12–15 minutes until fluffy.
  5. Cool quinoa slightly, then transfer to a mixing bowl.
  6. Add roasted sweet potato, onion, and parsley.
  7. Whisk remaining olive oil with lemon juice and garlic powder.
  8. Pour dressing over salad and toss gently before serving.
