  • Sweet potato cubed: 2 medium (400 g)
  • Onion chopped: 1 medium
  • Garlic minced: 3 cloves
  • Ginger grated: 1 tablespoon
  • Olive oil: 1½ tablespoons
  • Ground cumin: 1 teaspoon
  • Ground coriander: 1 teaspoon
  • Smoked paprika: 1 teaspoon
  • Chili powder: ½ teaspoon
  • Turmeric powder: ¼ teaspoon
  • Salt: 1 teaspoon
  • Vegetable broth: 3 cups 720 ml
  • Tomato puree: ½ cup 120 ml
  • Fresh coriander chopped: 2 tablespoons

Method
 

  1. Heat olive oil in a pot over medium heat and sauté onion until soft.
  2. Add garlic and ginger, stirring for 30 seconds until fragrant.
  3. Stir in cumin, coriander, paprika, chili powder, turmeric, and salt.
  4. Add lentils, sweet potato, broth, and tomato puree.
  5. Bring mixture to a boil, then reduce heat and simmer 30 minutes.
  6. Stir occasionally until lentils soften and stew thickens.
  7. Finish with fresh coriander before serving.
