Ingredients
  

For the Dough:
  • All-purpose flour – 2½ cups
  • Salt – ½ tsp
  • Olive oil – 3 tbsp
  • Cold water – ¾ cup
For the Filling:
  • Plant-based minced “beef” – 1½ cups
  • Olive oil – 1 tbsp
  • Onion chopped – 1 medium
  • Garlic minced – 2 cloves
  • Bell pepper chopped – ½ cup
  • Tomato paste – 2 tbsp
  • Cumin powder – ½ tsp
  • Paprika – ½ tsp
  • Chili flakes – ¼ tsp
  • Soy sauce – 1 tbsp
  • Salt – to taste
  • Pepper – ¼ tsp
  • Fresh coriander chopped – 2 tbsp
For Brushing:
  • Plant-based milk – 2 tbsp for golden shine

Method
 

  1. In a bowl, mix flour and salt. Add olive oil and cold water, then knead until soft and smooth.
  2. Cover the dough and let it rest for 15 minutes while you make the filling.
  3. Heat olive oil in a pan. Add onion and garlic, sauté until fragrant and lightly golden.
  4. Stir in bell pepper, tomato paste, vegan “beef,” soy sauce, cumin, paprika, chili flakes, salt, and pepper.
  5. Cook for 8–10 minutes until the mixture is well combined and aromatic. Add coriander and set aside to cool.
  6. Preheat oven to 190°C (375°F). Roll out the dough and cut circles about 4 inches wide.
  7. Place a spoonful of filling in the center of each circle. Fold over and press edges with a fork to seal.
  8. Brush tops with plant milk for that irresistible golden finish.
  9. Arrange on a baking tray lined with parchment paper.
  10. Bake for 25 minutes until crisp, flaky, and beautifully golden.
