Ingredients
  

  • 200 g plant-based beef crumbles
  • 1 medium sweet potato diced small
  • 1 tbsp olive oil
  • 1 tsp garlic minced
  • ¼ cup onions chopped
  • ½ cup bell peppers diced
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp lemon juice
  • 2 tbsp parsley or coriander chopped

Method
 

  1. Cook the sweet potato.
  2. Heat 1 tbsp olive oil and sauté diced sweet potato until soft.
  3. Add aromatics.
  4. Stir in 1 tsp minced garlic and ¼ cup chopped onions.
  5. Add plant-based beef.
  6. Add 200g vegan beef crumbles and cook until lightly browned.
  7. Add bell peppers.
  8. Stir in ½ cup diced peppers.
  9. Season boldly.
  10. Add paprika, cumin, salt, and pepper.
  11. Finish.
  12. Add 1 tbsp lemon juice and fresh herbs.
