Ingredients
  

  • 12 oz vegan shrimp substitute
  • 12 oz plant-based sausage sliced
  • 2 cups baby potatoes halved
  • 1 ½ cups corn kernels fresh or frozen
  • 1 red bell pepper chopped
  • 1 small zucchini sliced
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Lemon wedges for serving
  • Fresh parsley chopped (garnish)

Method
 

  1. Preheat grill to medium-high or oven to 400°F (200°C).
  2. In a large bowl, combine potatoes, corn, bell pepper, zucchini, vegan shrimp, and sausage.
  3. Drizzle olive oil and sprinkle Cajun seasoning, paprika, garlic powder, salt, and pepper; toss until coated.
  4. Lay out foil sheets; divide mixture evenly into four portions.
  5. Fold foil into tightly sealed packets.
  6. Place packets on grill or baking sheet; cook for 25 minutes until vegetables are tender.
  7. Carefully open packets, squeeze lemon juice, and garnish with parsley.
  8. Serve hot—preferably with extra sass and maybe cornbread.
