Chia Seed Banana Bread Recipe

Ingredients
  

  • 2 ripe bananas mashed
  • 1 ¼ cups all-purpose flour or oat flour
  • 2 tbsp chia seeds
  • ¼ cup maple syrup
  • 2 tbsp coconut oil melted
  • ½ cup plant milk
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Optional: 2 tbsp nuts or chocolate chips

Method
 

  1. Mash bananas.
  2. Mash 2 ripe bananas until smooth and creamy.
  3. Mix wet ingredients.
  4. Add maple syrup, melted coconut oil, and plant milk.
  5. Add chia seeds.
  6. Stir in chia seeds and let the mixture thicken for 2 minutes.
  7. Add dry ingredients.
  8. Mix in flour, baking powder, baking soda, cinnamon, and salt.
  9. Combine.
  10. Stir to make a smooth batter; add nuts or chocolate if desired.
  11. Fill pan.
  12. Pour batter into a lined loaf pan.
  13. Bake.
  14. Bake at 175°C for 40 minutes or until golden and firm.
  15. Cool and slice.
  16. Let it rest before cutting for clean slices.
