Ingredients
  

  • 4 large bell peppers halved and seeded
  • 1 cup vegan chicken substitute shredded
  • 1 ½ cups marinara sauce
  • 1 cup vegan mozzarella cheese
  • ½ cup vegan Parmesan cheese
  • ½ cup breadcrumbs
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté garlic and vegan chicken substitute in olive oil until golden.
  • Stir in marinara sauce and half of vegan mozzarella cheese.
  • Stuff bell pepper halves with the mixture, place in baking dish.
