Ingredients
  

  • cups cooked chickpeas
  • 2 cups fresh spinach leaves
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 3 cups vegetable broth
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped coriander

Method
 

  1. Heat olive oil in a pot and sauté onion for 2 minutes.
  2. Add garlic and stir for 30 seconds.
  3. Mix in cumin, turmeric, pepper, and salt.
  4. Add cooked chickpeas and toss for 1 minute.
  5. Pour vegetable broth and bring to a boil.
  6. Simmer for 12 minutes.
  7. Add spinach and cook for 2 minutes until wilted.
  8. Finish with lemon juice and fresh coriander.
