Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment like the domestic goddess you are.
  • In a large bowl, mash bananas until beautifully broken.
  • Stir in coconut oil, sugar, lime juice, zest, milk, and vanilla.
  • In a separate bowl, whisk flour, baking soda, and salt until thoroughly combined.
  • Gradually add dry mixture to wet ingredients. Stir until just combined—don’t beat it like it owes you rent.
  • Fold in shredded coconut like you mean it.
  • Pour batter into loaf pan and smooth the top gently, like applying under-eye cream.
