Coconut Oil Banana Bread Recipe

Ingredients
  

  • 2 ripe bananas mashed
  • 2 tbsp melted coconut oil
  • ¼ cup maple syrup
  • ½ cup plant milk
  • 1 ¼ cups all-purpose or oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Optional: 2 tbsp shredded coconut or chocolate chips

Method
 

  1. Mash bananas.
  2. Mash 2 ripe bananas in a mixing bowl.
  3. Add wet ingredients.
  4. Stir in melted coconut oil, maple syrup, and plant milk.
  5. Add dry ingredients.
  6. Mix in flour, baking powder, baking soda, cinnamon, and salt.
  7. Combine.
  8. Stir until smooth; add shredded coconut if desired.
  9. Pour into pan.
  10. Transfer batter into a lined loaf pan.
  11. Bake.
  12. Bake at 175°C for 40 minutes or until golden and firm.
  13. Cool and slice.
  14. Rest before cutting for perfect slices.
