Ingredients
  

  • 3 cups broccoli florets
  • 1 cup vegan cheddar shreds
  • 1 cup silken tofu for protein creaminess
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 3 cups vegetable broth
  • 1 cup plant milk
  • ½ teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice

Method
 

  1. Heat olive oil in a pot and sauté onion for 2 minutes.
  2. Add garlic and stir for 30 seconds.
  3. Add broccoli florets and cook for 3 minutes.
  4. Pour in vegetable broth and bring it to a boil.
  5. Add plant milk, smoked paprika, pepper, and salt.
  6. Add silken tofu and simmer for 10 minutes.
  7. Blend the soup until creamy using a blender.
  8. Stir in vegan cheddar and nutritional yeast until melted.
  9. Finish with lemon juice before serving warm.
