Ingredients
  

  • 8 oz elbow macaroni whole wheat or gluten-free
  • 1 medium cauliflower head chopped (about 4 cups)
  • 1 cup unsweetened almond milk
  • 3 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh parsley chopped (optional garnish)

Method
 

  1. Bring a large pot of salted water to boil, cook macaroni until al dente, then drain.
  2. In a saucepan, steam cauliflower for 8–10 minutes until fork tender.
  3. Transfer cauliflower to blender with almond milk, nutritional yeast, olive oil, garlic, lemon juice, mustard, paprika, salt, and pepper.
  4. Blend until smooth, creamy, and silky.
  5. Return pasta to pot, pour cauliflower sauce over noodles, and stir until fully coated.
  6. Heat gently on low for 2–3 minutes to combine flavors.
  7. Serve hot, topped with fresh parsley if desired.
