Ingredients
  

For the Vegan Chicken
  • Vegan chicken fillets – 250 g
  • Olive oil – 1 tbsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
For the Garlic Parmesan Sauce
  • Dairy-free butter – 1 tbsp
  • Garlic – 1 tbsp minced
  • Coconut milk or vegan cream – ½ cup
  • Vegan parmesan – 3 tbsp grated
  • Italian herbs – ½ tsp
  • Nutritional yeast – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
For Serving
  • Pasta rice, or mashed potatoes – 1 cup
  • Parsley – 1 tbsp chopped

Method
 

  1. Heat olive oil in a pan.
  2. Season vegan chicken with salt and pepper.
  3. Sear each fillet for 3–4 minutes per side; remove.
  4. Melt vegan butter in the same pan.
  5. Add garlic and sauté until fragrant.
  6. Pour coconut milk or vegan cream.
  7. Add vegan parmesan, nutritional yeast, herbs, lemon, salt, and pepper.
  8. Simmer for 3 minutes until creamy.
  9. Return vegan chicken to the sauce.
  10. Coat and serve with parsley.
