  • 1 ¼ cups all-purpose or oat flour

  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup plant milk as needed

Method
 

  1. Prep bananas.
  2. Mash 2 ripe bananas until smooth.
  3. Add wet ingredients.
  4. Mix in vegan Greek yogurt, maple syrup, and melted coconut oil.
  5. Add dry ingredients.
  6. Stir in flour, baking powder, baking soda, cinnamon, and salt.
  7. Adjust texture.
  8. Add plant milk if needed for a smooth, pourable batter.
  9. Fill pan.
  10. Pour into a lined loaf pan and level the top.
  11. Bake.
  12. Bake at 175°C for 40 minutes or until golden and firm.
  13. Cool and slice.
