Ingredients
  

For the marinade:
  • 4 vegan chicken breasts
  • ¼ cup fresh lime juice
  • 2 tbsp olive oil
  • 3 tbsp fresh cilantro chopped
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika optional

Method
 

  1. In a mixing bowl, combine lime juice, olive oil, garlic, cilantro, salt, pepper, and paprika.
  2. Coat vegan chicken breasts with marinade and refrigerate 15–30 minutes for maximum flavor.
  3. Preheat grill or grill pan over medium-high heat.
  4. Place marinated breasts on grill and cook 5–6 minutes per side until grill marks appear and protein is heated through.
  5. Remove from heat and let rest 3–5 minutes for juiciness.
