Ingredients
  

  • For the Vegan Salmon
  • Plant-based salmon fillets: 4 pieces
  • Olive oil: 2 tbsp
  • Lemon juice: 2 tbsp
  • Salt: 1/2 tsp
  • Black pepper: 1/4 tsp
  • For the Herb Butter
  • Vegan butter softened: 1/3 cup
  • Garlic: 2 cloves minced
  • Fresh parsley: 2 tbsp chopped
  • Fresh dill: 1 tbsp chopped
  • Lemon zest: 1 tsp

Method
 

  1. Preheat grill or grill pan to medium-high.
  2. Brush vegan salmon fillets with olive oil, lemon juice, salt, and pepper.
  3. Grill fillets 4–5 minutes per side, until golden with grill marks.
  4. In bowl, mix vegan butter, garlic, parsley, dill, and lemon zest until smooth.
  5. Remove salmon from grill; top immediately with herb butter.
  6. Let butter melt into fillets.
  7. Garnish with extra parsley and lemon slices.
  8. Serve hot with vegetables or salad.
