Ingredients
  

  • cups plant-based turkey strips
  • 2 cups cooked noodles
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 3 cups vegetable broth
  • 1 cup plant milk
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon thyme
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Heat olive oil in a pot and sauté onion for 2 minutes.
  2. Add garlic and cook for 30 seconds.
  3. Add carrots and celery, stirring for 3 minutes.
  4. Add thyme, pepper, and salt.
  5. Add plant-based turkey strips and cook for 2 minutes.
  6. Pour in vegetable broth and bring to a boil.
  7. Add plant milk and simmer for 10 minutes.
  8. Stir in cooked noodles and heat for 2 minutes.
  9. Finish with lemon juice and fresh parsley.
