  • 1 lb carrots peeled and cut into sticks
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup vegan swap for honey
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp sea salt
  • 1 tsp fresh thyme leaves optional garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk balsamic vinegar, maple syrup, olive oil, garlic powder, salt, and pepper until smooth.
  3. Toss carrots in the glaze until evenly coated.
  4. Spread carrots on baking sheet in a single layer.
  5. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  6. Remove, drizzle remaining glaze, and sprinkle fresh thyme before serving.
