Ingredients
  

  • Lentils uncooked — 1 cup
  • Water — 3 cups
  • Vegan feta cheese — 1 cup
  • Cherry tomatoes — 1 cup
  • Cucumber diced — 1 cup
  • Red onion diced — ½ cup
  • Olive oil — 2 tbsp
  • Lemon juice — 2 tbsp
  • Garlic minced — 1 clove
  • Fresh parsley — 2 tbsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp

Method
 

  1. Cook lentils with water in medium pot for 15 minutes.
  2. Drain lentils and cool slightly.
  3. Place lentils into mixing bowl.
  4. Add cherry tomatoes, cucumber, red onion, and vegan feta.
  5. Mix olive oil, lemon juice, garlic, salt, and black pepper.
  6. Pour dressing over salad.
  7. Toss gently until combined.
  8. Sprinkle fresh parsley before serving.
  9. Serve slightly chilled or room temperature.
