  • Salmon fillets vegan swap: marinated tofu: 2, 150g each
  • Cherry tomatoes: 1 ½ cups
  • Kalamata olives: ½ cup pitted
  • Garlic cloves: 3 minced
  • Olive oil: 2 tbsp
  • Lemon juice: 2 tbsp
  • Fresh parsley: 2 tbsp chopped
  • Dried oregano: 1 tsp
  • Salt: ½ tsp
  • Black pepper: ¼ tsp

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on parchment-lined baking sheet.
