Mixed Berry Cobbler Recipe

Mixed Berry Cobbler Recipe

If comfort food had a summer fling, it’d be this Mixed Berry Cobbler. It’s messy, dramatic, and ridiculously sweet — like your favorite reality show. Juicy berries bubble under a golden, biscuit-like topping that practically screams, “I’m too gorgeous to share.” The smell alone could make your neighbors forgive all your noise complaints. It’s vegan, outrageously easy, and comes together faster than you can say “dessert emergency.” Serve it warm with vegan ice cream and prepare for emotional support-level satisfaction. Because sometimes, the only thing better than berries is pretending fruit makes this healthy.

For the Berry Filling:
  • Mixed berries fresh or frozen – 4 cups (strawberries, blueberries, raspberries, blackberries)
  • Coconut sugar – ½ cup
  • Cornstarch – 2 tbsp
  • Lemon juice – 1 tbsp
  • Vanilla extract – 1 tsp
For the Cobbler Topping:
  • All-purpose flour – 1 cup
  • Baking powder – 1½ tsp
  • Coconut sugar – 3 tbsp
  • Salt – ¼ tsp
  • Coconut oil – ¼ cup solid
  • Almond milk – ½ cup

Method

  1. Preheat oven to 190°C (375°F).
  2. In a bowl, mix berries, sugar, cornstarch, lemon juice, and vanilla until evenly coated.
  3. Pour the berry mixture into your baking dish.
  4. In another bowl, whisk flour, baking powder, sugar, and salt.
  5. Add coconut oil and cut it in with a fork until the mixture looks crumbly.
  6. Pour in almond milk and stir just until a thick batter forms.
  7. Drop spoonfuls of batter over the berries — rustic is the goal here, not perfection.
  8. Bake for 35 minutes or until golden and bubbly.
  9. Cool slightly before serving (or dive in recklessly, no judgment).
  10. Serve warm with vegan ice cream or coconut whipped cream for the ultimate indulgence.
