  • ¾ cup brown sugar
  • ½ cup cane sugar
  • ¼ cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup vegan chocolate chips
  • ¾ cup chopped walnuts

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Whisk oats, flour, baking soda, and salt in a medium bowl.
  3. In another bowl, cream vegan butter, coconut oil, brown sugar, and cane sugar until fluffy.
  4. Stir in applesauce and vanilla until smooth.
  5. Slowly mix in dry ingredients to form dough.
  6. Fold in chocolate chips and walnuts evenly.
  7. Scoop dough balls onto baking sheet, spacing two inches apart.
  8. Bake 10–12 minutes until golden edges appear.
