Ingredients
  

For the Fried Rice
  • Cooked rice – 2 cups preferably cold
  • Vegan egg mixture – ½ cup
  • Olive oil – 1.5 tbsp
  • Garlic – 1 tsp minced
  • Carrots – ¼ cup finely diced
  • Peas – ¼ cup
  • Spring onions – 2 tbsp chopped
Sauce
  • Soy sauce – 1 tbsp
  • Salt – a pinch
  • Pepper – ¼ tsp

Method
 

  1. Heat olive oil in a wok.
  2. Add garlic and sauté for 30 seconds.
  3. Pour in the vegan egg mixture and scramble lightly.
