Ingredients
  

  • Main Bake
  • Vegan salmon fillets – 250 g
  • Broccoli florets – 1.5 cups
  • Olive oil – 1.5 tbsp
  • Garlic – 1 tsp minced
  • Lemon juice – 1 tbsp
  • Paprika – ½ tsp
  • Italian herbs – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
  • Optional Topping
  • Nutritional yeast – 1 tbsp
  • Chili flakes – ¼ tsp

Method
 

  1. Preheat oven to 200°C.
  2. Add broccoli to a bowl.
  3. Toss with olive oil, garlic, paprika, salt, and pepper.
  4. Spread evenly in a baking dish.
  5. Place vegan salmon fillets on top.
  6. Drizzle olive oil and lemon juice over the fillets.
  7. Sprinkle Italian herbs.
  8. Bake for 20 minutes, until edges brown slightly.
  9. Add nutritional yeast and chili flakes if desired.
  10. Serve warm with rice or mashed potatoes.
