Ingredients
  

For the Grits
  • Stone-ground grits: 1 cup
  • Water: 3 cups
  • Plant-based milk: 1 cup
  • Vegan butter: 2 tbsp
  • Salt: 1/2 tsp
For the Creole Shrimp
  • Vegan shrimp: 2 cups
  • Olive oil: 2 tbsp
  • Onion: 1 small diced
  • Bell pepper: 1 diced
  • Garlic: 3 cloves minced
  • Crushed tomatoes: 1 cup
  • Creole seasoning: 1 tbsp
  • Smoked paprika: 1 tsp
  • Lemon juice: 1 tbsp
  • Fresh parsley: 2 tbsp chopped
  • Salt and pepper: to taste

Method
 

For the Grits
  1. Bring water and plant milk to boil in saucepan.
  2. Slowly whisk in grits, reduce heat, and simmer 20 minutes, stirring often.
  3. Stir in vegan butter and salt until creamy.
For the Creole Shrimp
  1. Heat olive oil in skillet; sauté onion, pepper, and garlic for 5 minutes.
  2. Stir in crushed tomatoes, Creole seasoning, smoked paprika, salt, and pepper. Simmer 10 minutes.
  3. Add vegan shrimp; cook 5 minutes, stirring occasionally.
  4. Finish with lemon juice and parsley.
To Serve
  1. Spoon grits into bowls, top with Creole shrimp mixture, and garnish with extra herbs.
