Ingredients
  

  • Firm tofu – 250 g cubed
  • Broccoli florets – 1 cup
  • Bell pepper – 1 cup sliced
  • Carrot – ½ cup julienned
  • Olive oil – 1½ tablespoons
  • Garlic – 3 cloves minced
  • Ginger – 1 teaspoon grated
  • Soy sauce – 2 tablespoons
  • Sriracha – 1 tablespoon
  • Maple syrup – 1 teaspoon
  • Sesame oil – 1 teaspoon
  • Cornstarch – 1 teaspoon
  • Water – 2 tablespoons
  • Spring onions – 2 tablespoons chopped

Method
 

  1. Toss tofu with cornstarch until lightly coated.
  2. Heat olive oil in a pan over medium-high heat.
  3. Add tofu and cook for 6–7 minutes until golden on all sides.
  4. Remove tofu and set aside.
  5. Add garlic and ginger to the same pan and sauté for 30 seconds.
  6. Add broccoli, bell pepper, and carrot, then stir-fry for 4 minutes.
  7. Mix soy sauce, sriracha, maple syrup, water, and sesame oil.
  8. Return tofu, pour sauce, toss until glossy, then finish with spring onions.
