Ingredients
  

For the Omelet
  • Vegan egg mixture – ½ cup
  • Spinach – 1 cup chopped
  • Vegan feta – 2 tbsp crumbled
  • Onion – 1 tbsp finely chopped
  • Olive oil – 1 tsp
  • Salt – a pinch
  • Pepper – ¼ tsp
Optional Add-ins
  • Cherry tomatoes – 2 tbsp halved
  • Oregano – ¼ tsp

Method
 

  1. Heat olive oil in a non-stick pan.
  2. Add onion and sauté for 30 seconds.
  3. Add spinach and cook until wilted.
  4. Pour in the vegan egg mixture.
  5. Sprinkle vegan feta, salt, and pepper.
  6. Let it cook on low heat for 3–4 minutes.
  7. Fold gently using a spatula.
  8. Serve warm with herbs or tomatoes.
