Ingredients
  

  • Sweet potato cubes – 2 cups
  • Olive oil – 1 tbsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp
  • Cooked tuna canned or fresh – 1 cup, flaked
  • Lettuce – 1 cup shredded
  • Cherry tomatoes – ½ cup halved
  • Cucumber – ½ cup chopped
  • Lemon juice – 1 tbsp
  • Dijon mustard – 1 tsp
  • Garlic powder – ¼ tsp
  • Paprika – ½ tsp
  • Fresh parsley – 1 tbsp chopped

Method
 

  1. Preheat your oven to 200°C.
  2. Toss sweet potato with olive oil.
  3. Add salt and pepper.
  4. Spread on a baking tray.
  5. Roast for 20 minutes.
  6. Add tuna to a bowl.
  7. Stir in lemon juice.
  8. Add mustard.
  9. Mix in garlic powder.
  10. Add paprika.
  11. Toss gently until coated.
  12. Add lettuce to serving bowls.
  13. Add roasted sweet potato.
  14. Add tomatoes and cucumber.
  15. Top with seasoned tuna.
  16. Sprinkle parsley before serving.
